The five-star hotel, the Château Sainte Sabine is situated in the middle of the wild beauty of an 8-hectare park. Not only is this lovingly maintained castle a visual delight. From the Château, they can admire charming views of Châteauneuf-en-Auxois in the distance, recognized as one of France’s most picturesque villages. Closer by, from the Château’s tower, guests can take in the surrounding Sainte-Sabine village and its 16th-century church.

The Château Sainte Sabine features 23 separate residences, including rooms and suites. The impressive and luxurious 110m2 The Salle des Gardes suite is the crown jewel, featuring stunning woodwork, a magnificent 5-meter-high ceiling, and a splendid neo-Gothic fireplace that illuminates the master bedroom on cold nights.
Some castle rooms are currently undergoing renovation, this time to be adorned with the vibrant and enduring fabrics of Pierre Frey. These renovations are progressing gradually, without haste, ensuring the essence of the Château is preserved.
Gastronomy
At Restaurant Lassey, Chef Benjamin Linard and his culinary team present genuine gourmet fare, reimagining Burgundian classics with seasonal ingredients. Dishes are crafted in collaboration with nearby producers, often just a stone’s throw away from the Château. Chef Benjamin Linard is a proud ambassador of the “Savoir-faire 100% Côte d’Or” brand, which celebrates chefs from the Côte-d’Or region dedicated to showcasing their local expertise.
Every Saturday, the hotel guests and visitors can enjoy seasonal pastries, viennoiserie, and a selection of regional cheeses, all complemented by the perfect pairing of a warm or cold beverage. It’s blissful to just take a seat on the sunny hotel terrace overlooking the park and its fallow deer or sit in the cozy dining room on cooler days.
Adjacent to the castle, a 2700m2 organic vegetable garden has been established, along with a henhouse, seven hives housing local Burgundian black bees, a conservatory orchard, and two meadows dedicated to honey-producing plants.
